Leek Sausages


This meal is extraordinary for me.
My hubby and I love it. Instead of frying nuggets, I make this and its mouth watering.
I will add the picture next time as me and my hubby ate all before taking picture. :)



Ingredients:

150g of breadcrumb
100g of grated cheese
1 leek (sliced thinly)
2 eggs
milk (optional)
mustard seeds
all purpose flour
oil
salt
black pepper


Method:

1. In a large bowl, mix well breadcrumb, cheese, leek, mustard seeds, salt & black pepper.
2. Separate the egg yolk and white. 
3. Beat in egg yolk into mixture. You may also  use milk to gather together the mixture.
4. Divide the mixture and shape into sausages. Cover and leave in the refrigator for 1 hour.
5. After an hour, heat up oil for deep fry. Meanwhile, coat the sausages with egg white (which is
    lightly whisked) followed by flour.
6. Cook till crispy and brown.Lift out, drain on kitchen paper and serve immediately.

Vegan Moist Orange Cake

Another simple vege cake:


Ingredients:

A
120 gram sifted cake flour
80 gram caster sugar
1/2 tsp baking soda
1/2 tsp salt

B
80 ml orange juice
30 ml vege oil
1/2 tsp vinegar
1 tsp vanilla extract
3 tbsp mayonise

Method:
1. Preheat oven at 170 Deg C.
2. Mildly, whisk ingredient B.
3. Mix well Ingredient A in a separate bowl.
4. Fold wet and dry ingredient gently.
5. Pour into tin with lined grease proof paper and bake for 30 minutes



Cucumber Yoghurt Soup

This soup is best taken during the warm season.


Ingredients:
1 cucumber
4 tbsp of yoghurt
40ml cold water
2 garlic cloves
a pinch of salt
apple cider vinegar

Method:
1. Dice 1/3 of cucumber into small cubes and set aside.
2. Peel off the balance and blend it with garlic and cold water.
3. When the mixture is smooth, pour into a large bowl and add yoghurt and diced cucumber.

You may consume as raita also.

Carrot Cake


This is a famous cake where everyone loves it and it is full of flavor and moist without being mushy. 

Ingredients:

A
120 gram sifted flour
30 gram granulated sugar
1/2 tbs baking powder
1/2 tbs baking soda
1/2 tsp ginger
a pinch of salt

B
50 gram brown sugar
16 ml plain yogurt
40 ml oil
60 gram shredded carrot
1 egg
1/2 tsp vanilla essence

Method:
1. Heat oven at 170 Deg C.
2. Combine ingredient A in bowl.
3. In aanother bigger bowl, whisk together brown sugar, yogurt, oil,egg and vanilla essence.Whisk it 
    for 1-2 minutes.
4. Fold the dry and wet ingredient together .
5. Add grated carrot.
6.Upon, mixing well. Pour into tin with lined grease proof paper. Bake it for 30 minutes.

Egg Subsitution

Egg Substitution:


  1. 1/2 tin of Condensed Milk  for 2.5 cup Flour
  2. Soy Milk and Banana
  3. 7-up
  4. Blend Flax Seed with water till becomes sticky.
  5. 1 tsp Yeast with 1/4 cup Water
  6. 1 1/2 tbsp Water ,1 1/2 tbsp Oil and 1 tsp Baking Powder.
  7. 3 tbsp Mayonnaise for 1Egg
  8. 3tsp of Flaxseed, whisk into boiling water.                 Leave it for 5 minutes before adding to cake

Eggless Orange Cake


As requested, I manage to try out this recipe and turn out pretty well. I have separated the ingredient into 2 bowls (A &B) so its easy to mix before combining and which helps to keep the texture of the cake.


Ingredients:

Bowl A
130 ml of condensate milk
50 ml of oil
50 ml of orange juice
1.5 tbsp of caster sugar

Bowl B
120 gram of flour( sifted)
1/2 tsp of baking soda
1/2 tsp of baking powder
1/2 tbsp of orange zest

+

1/2 tsp of vanilla essence
1 tsp of apple cider vinegar

Method:
1. Preheat oven at 170 degree C.
2. Whisk Ingredient Bowl A
3. Fold Bowl B ingredient  into Bowl A gently until everything is well mixed. (To fold - use a rubber spatula or spoon)
4. Add vanilla essence and apple cider vinegar and stir mildly.
5. Pour the mixture into greased and floured tin and bake for 35 min in a preheated oven or until a toothpick inserted in the center of the cake comes out clean.

Spinach Patty with Tomato Salsa

This recipe turn out well and was very filling. It is simple and delicious.

Ingredients:
A
150g Spinach
2 eggs
50 g of all purpose flour
2 tbsp of water
Oil for frying
salt
grounded black pepper

B
2 tomatoes, peeled and chopped
1/4 fresh chili, chopped ( cili padi can also)
1 small onion, chopped
1 garlic clove, crushed and chopped
1 tbsp of apple cider vinegar ( I'm using S&W)
1 tbsp of olive oil
1/4 tbsp of brown sugar


Method:
1. To prepare the tomato salsa ,combine  ingredient B in a bowl and toss it well.Cover it and leave at a cool place for 2-3 hours.
2. After 90 minutes, finely chop the spinach and place into a separate bowl. Beat in the eggs and sprinkle  black pepper and salt.
3.Add in flour which is blend with water. Mix it well and leave it for 20 minutes at room temperature.
4. After 20 minutes, heat up the non stick pan and place the spinach batter shaped as pancake. The patty will appear brownish as indication it been cooked.
5. Serve the patty with tomato salsa.
