Shredded Chicken



Ingredient:
1/2kg chicken
1/4tsp turmeric


2 tbsp. oil
2 sliced onions
2 chopped chilli
curry leaves
1 tsp garlic ginger paste
2 chopped tomatoes
1/4 tsp turmeric powder
1 tsp chilli powder
1 tsp masala powder


2 tsp coriander powder
2 tsp pepper powder


chopped coriander leaves








Method:
1. In a pressure cooker, dump in the chicken, salt, turmeric and enough water to cover the chicken.
2. Let it whistle about 2- 3 times.
3. Remove the chicken and keep aside the chicken stock.
4. Once the chicken is less hot, shred  it.


5. In a wok, pour oil and sauté the sliced onion, chopped green chilli and curry leaves well.
6. Add garlic ginger paste, chopped tomatoes, turmeric powder, chilli powder, masala powder and  salt- cook in high flame for few minutes.
7. Then , with low flame, add  the shredded chicken, coriander powder, pepper powder. Stir it well.
8. Add in chicken stock and let it cook for few minutes.
9. Sprinkle coriander leaves before serving.

Mee hun goreng assam pedas



 
Ingredients:


A
Dry shrimps - 2 tbsp (soaked)
Red chilli padi - 6
Shallots - 4 pcs
Garlic - 6 pcs
Assam jawa - 1 tbsp (without the seeds)
 
B
Oil
Mee hun - 200g (soaked n set aside once soft)
Chicken  marinate with salt n pepper
Taufu cut in squares - 2 squares
Cabbage & carrot - thinly sliced
Limau purut leaves- 2 sliced
Mixed sauce - Oyster sauce, light soya sauce,sesame oil, a pinch of salt, chili sauce, and tomato sauce
 


 Method:
  1. Blend ingredient A and keep aside.
  2. Pour enough oil in a pan, stir fry the blended ingredients till fragrant.
  3. Add chicken  and stir well in a medium low heat.
  4. Once mixture is well combined, add noodles and stir well.
  5. Add mixed sauce and stir well.
  6. Add vegetables and taufu and stir till well combine.
  7. Add in limau purut leaves.
  8. Ready to serve.

Oatmeal Chocolate Chip Lactation Cookies

Ingredients:
  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 4 tbsp. water
  • 2 tbsp. flax seed
  • 2 eggs
  • 1 tsp vanilla
  • 2 cup flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 cup oats
  • 1 cup chocolate chip
  • 4 tbsp. brewer yeast
Method:
  1.  Mix flaxseed with water and let it rest for 5 min.
  2.  Beat butter, sugar and brown sugar.
  3. Add egg and mix well.
  4. Add flaxseed mix, vanilla and mix it well.
  5. Sift flour, brewers yeast,baking soda and salt. Keep it aside.
  6. Add 5 into 4.
  7. Add in oats and chips.
  8. Then bake it.

Cornflakes Chivda






Ingredients:
  • peanuts -1/2 cup
  • cornflakes -2 cups
  • cashew nuts-20 to 25
  • turmeric powder -2tsp
  • salt to taste
  • sugar -1tbsp
  • chilli powder -2tsp
  • mustard seeds -1/2tsp
  • curry leaves -10 to 12 leaves
  • raisins -20 to 25
  • oil
Method:
  1. In a wok,deep fry peanuts and cornflakes separately. Keep it aside.
  2. Leave approximately 2 tbsp oil in the work, fry mustard seeds, curry leaves, raisins and cashewnuts.
  3. Off the fire, add chilli powder, turmeric powder, salt and sugar. Stir well.
  4. Add fried peanuts and cornflakes. Mix it well.
  5. Ready to munch. :)

Kerala Chicken Varuval









Marination:
  • chicken - 500 grams
  • garlic & ginger paste-  2tsp
  • salt- to taste
  • lemon- 1 tsp
  • masala powder -1 tbs
  • red chilli powder - 2 tbs
  • turmeric powder - 1 tsp
  1. Mix all well and marinate for 30 min  in fridge.
Masala:
  • onion-1 big (sliced)
  • tomato - 1
  • green chilli -2/3
  • garlic - 2 tsp (chopped)
  • curry leave- 2 spring
  • ginger -2 tsp (chopped)
1. Heat up coconut oil in deep pan, add in crushed ginger and garlic.
2. Add finely chopped green chilli.
3. Add handful of curry leaves.
4. Add in sliced onions, sauté till translucent.
5.  Add in chopped tomato. Cook till mushy.
6. Now add marinated chicken.
7. Cover and cook for 7 mins and cook uncovered for anther 7-8 min.
8. Sprinkle coriander leaves and serve with rice or bread.
